Oh, How I’ve Missed You!

This is my first WIAW!  I stopped keeping track of everything that I eat for awhile now due to the fear that I’ll fall back into counting and cutting down calories.  However, I think it’s necessary now to evaluate my eating habits and patterns.  For the most part, I’m pretty good about eating a clean, well-balanced diet (actually I make it a top priority of mine), but lately I’ve been getting a serious case of  carb and sugar cravings.  Couple that with serious water retention and bloating, and I just feel gross and frumpy :(.  The old me would’ve starved myself until I felt skinny and “empty” again, but I’m really trying to make that extra effort to nourish my body the proper way.

Well, it turns out that my discomfort, bloating, and unusual cravings were due to…drum roll, please….the return of my period!!  It’s been a year and a half since my last one, so you can imagine how over the moon I was this morning!  I was screaming and doing the Carlton dance at 5 in the morning!  I’ve had to make some serious changes in my life, but it was all worth it!

Thank you, Jesus!  There were so many moments when I felt my soul burn with anger, frustration, bitterness, and rebellion.   However, You never left my side.  I see now that You’ve been waiting for me to surrender everything to You, which I found myself doing more and more each day through the Living the Surrendered Life seriesI Love You, Lord!  I will forever cherish this moment.

While I’m thankful and proud of how much my body has changed, I cannot say that I’m in love with it right now.  I’m currently at my heaviest weight ever, and quite frankly, it feels awkward and foreign to me.  That poisonous inner voice keeps telling me that I can afford to lose some “extra” weight.  However, when the weight comes off, I know I’ll be wishing I was a lil’ bit bigger and stronger.  There’s no end to this wavering back and forth.  It’s all so mind-boggling why I feel so insecure.  God loves me.  Tim actually prefers the way I look now.  My friends and family celebrate the new me.  What else should matter?  I guess I need to add this to the list of things I still need to surrender fully to God.

Whew!  I feel so relieved now that I got that off my chest!

And now, let’s turn our focus back to WIAW!  Here’s what yesterday’s diet looked like… Thank you, Jenn, for hosting this!

Breakfast

Frosted mini wheats + 1 cup Silk Unsweetened Almond Milk + 1 scoop chocolate protein powder

I’ve been eating this same bfast for about a month now, and I can honestly say that I’m not sick of it yet.  If I’m feeling a lil’ wild and out of control, I will add a banana.  I go through phases – one month it’s cereal, then it’s overnight oats, then it’s PB&J, etc.

Why mini wheats, you ask?  I interned with Kellogg’s for the TSDA Conference, and I took home 2 boxes of leftover samples.  Being the greedy frugal one that I am, I decided to keep them all to myself.  Muhahaha!!!  I’ve already finished a whole box ;).

Snack #1

Have you ever had Korean sweet potatoes?  They are quite different from the orange ones we see here in the States.  The color of the flesh is yellow, and they taste like chestnuts dipped in honey.  I simply roasted them in the oven at 400F for 30 minutes and voila!  The perfect snack.

This is a very popular Korean “bbang,” which translated means bread.  In Korea, bbang refers to these kinds of sweet treats that are more like dessert.  They have decadent and delectable fillings such as sweet potato, mocha cream, green tea, cream cheese, chocolate, chestnut, pumpkin, and much more!  This particular one is filled with sweet red bean paste, my favorite!

Remember the creamy tomatillo and avocado sauce I made earlier?  With the refrigerated leftover sauce, I made a wrap made up of chicken, kale, sauce, tomatoes, and zucchini.  It was so refreshing and delicious!

Now onto fitness!

I’ve always thought that a good workout equated to going to the gym and being drenched in sweat.  I’m learning that this is certainly NOT true!   During this recovery phase of mine, I have discovered what awesome sources YouTube and Hulu are for yoga and other low-intensity workouts.  Thanks to Katie, I did the Yoga Slow Flow yesterday, and my body def thanked me for it!

Apparently Kona was really into it as well! :).

I think I’m going to be on Cloud 9 all day today!  To top it off, I’m going to NYC tomorrow!!    Let the fun begin :).

    C-O-N-G-R-A-T-U-L-A-T-I-O-N-S!!!! And I don’t mean for doing a yoga session. I truly wish there was a store in my area to pick up some of those delicious looking Korean foods. That sweet potatoe sounds mmm-mmm-mmmmm! Enjoy your trip and safe travels.

      Carol, you’re simply the best! Thank you :)! I’m sorry there’s no Korean groceries where you live, which is sort of unusual (we live everywhere!). Sometimes other oriental markets have these sweet potatoes. They may be labeled Japanese sweet potatoes, but they’re essentially the same!

      You can buy them at any Korean or other Asian markets (not all the time)! You must try both if you can get your hands on them :).

      You’ve had it before, I see? Isn’t it so addictive? Next time, I’m going to send him away bc he took away my precious space on the mat during most of the session :(.

      I love my body! I’m going to try honor it the best I know how! So happy to declare that those dark days are long gone :).
      Oh my diet’s been so terrible…I felt almost embarrassed to do the post! However, I want to do this once a week, alongside everyone else, so that I can keep track of my diet. Hopefully when my cycle ends, my appetite will be back to normal!

  8. Min, I’m so glad that things are getting better with your period/body! I know how it is to get frustrated when your body goes through changes but I love your perspective and positive attitude about it! Also I laughed when I saw Kona because he/she(?) looks like he is doing a yoga pose! Thanks for sharing your WIAW, I wish I had done it this week but didn’t keep track of my food today 🙂 Have fun in New York! I’ve never been!

      Thank you, Natalie! Having gained nearly 10 pounds in the last 4 months, my mind was and is def not happy with me. However, it’s clear that my body’s loving the new addition :).
      Kona is a he. I laughed when I saw the picture too! He’s sitting soo pretty which does not happen usually. I look forward to readying your WIAW next week ;). Thank you for wishing me safe travels! Oh, I hope you get the chance to visit NYC soon! It’s been awhile for me as well, so I’m super excited!

    You know, that’s what my sis calls it all the time! At first, I thought she made it up, cuz I’ve never heard it before. Thanks, Michelle! I must say that it wasn’t an easy journey, but I’m so glad that I kept going. I love my body, and it finally loves me back :)!!

    I must send Kona away next time! He was just…in my way! Sorry, Kona..mommy just had to say that. Cover your ears.

    Girrllll you’re makin’ me wanna cry and jump for joy in juust SOOO MANY WAYS!!!! I’m so happy for you, proud of you, inspired by you, and amazed by your inner and outer beauty…for reals! Praise the Lord for all that He does–and even if He weren’t to do everything that He already does–He STILL deserves the praise! That’s something I’m always reminded of. And your food…..I loooove gogoomah! And the bbangs! especially gomboh bbang…..drool. I seriously think if you and I were close to each other physically, we’d be SUCH great friends. haha!       I’m the 고구마 and 빵 킬러! Funny you mention 곰보빵! That and 팥빵 are 2 of my fav! I always pick at the bumpy, crusty (don’t know how else to describe it) part of 곰보빵 :).
